Winter weather got you down? Try making this Raw Mock Potato Salad from those root veggies and think about warmer days ahead.
Not Potato Salad
Salad:
- 1 red bell pepper, finely chopped
- 3 stalks of celery, finely chopped
- 1/2 onion, minced
- 1 Jicama, chopped into small cubes or 5 zucchini or squash, peeled and diced
- 1 Turnip or other root veggie cubed
- 1⁄2 lemon pickled cucumbers, chopped
- 2 cups macadamias or cashews, soaked in filtered water
- 1/4 cup lemon or lime juice
- 1 chunk of onion
- 1 garlic clove
- 1 date or 1 tablespoon agave nectar or more to taste
- 2 teaspoons prepared mustard or powered mustard
- 2 teaspoon ground cumin
- 1 teaspoon dried dill
- 1 tablespoon of fresh thyme or 1 to 2 teaspoons dried thyme
- 1 teaspoon sea salt
- 1/2 teaspoon white or black pepper
Put the macadamias into a strong blender or Vita-Mix Blender, add:
- lemon juice
- date or Agave Nectar,
- chunk of onion
- garlic clove
Next, take a tablespoon of mac mayo in a bowl adding:
- 1 teaspoon mustard,
- 1 teaspoon lemon juice
- 1/2 teaspoon of turmeric
- 1 teaspoon Agave
- 1/4 teaspoon sea salt
Now back in the blender add:
- the prepared mustard you made
- cumin
- fresh thyme
- dried dill
- sea salt
- 1/2 teaspoon white or black pepper
Transfer the macadamia mayo to a bowl then add the Jicama (or zucchini) and veggies, stir together.
Lemon-Pickled Cucumbers:Instead of pickles
- In a glass jar add:
- 1 large cucumber or 3 pickling cucumbers, sliced
- 1 lemon, juiced
- 1 garlic clove, crushed
- 1 tablespoon of dried dill
- 1 teaspoon of pepper
- water to fill the jarSoak overnight or more.
